It’s a great recipe for kids to make as it’s a simple mix & bake method and it’s fantastic to encourage kids to learn to cook as it’s an invaluable life skill. Berry and chocolate muffins
These berry and chocolate muffins are an excellent option to pack in lunch boxes or to enjoy as an after-school snack. They are yummy for Sunday morning breakfast too!
Equipment
- muffin tray
- mixing bowl
- mixing spoon and/or spatula
- measuring cups + spoons
Ingredients
Wet ingredients
- ½ cup oil neutral
- ⅓ cup sugar white or raw
- ⅓ cup honey
- 165 ml milk
- 2 eggs
Dry ingredients
- 1 ½ cups self-raising flour
- ½ cup wholemeal flour
- 1 tsp baking powder
Add-ins
- 1 cup berries of your choice can be fresh or frozen
- ½ cup chocolate chips white, milk or dark, choose your favourite
Instructions
- Preheat the oven to 170C fan-forced. Line a 12 hole muffin pan with papers or grease them with butter.
- Add wet ingredients to a mixing bowl and whisk to combine.
- Sift in dry ingredients and stir to just combine, lumps are okay at this stage.
- Gently stir through berries and chocolate chips.
- Divide the mixture between the muffin holes.
- Bake for 22-25 or until the muffins are golden brown and the tops spring back when pressed gently with your finger. Or insert a cake tester in the centre of a muffin, if it comes out clean they are ready.
- Cool in the tray on a cooling rack for a few minutes before removing them from the muffin tray and placing onto the rack.
Notes
- Muffins are a great recipe for kids to bake due to the mix and bake technique
- If the kids are homeschooling this is a great activity to do when school finishes for the day
- These muffins are excellent for morning or afternoon tea
- They freeze well so you always have them on hand
- It’s fantastic to encourage kids to learn to cook and to enjoy doing it - this invaluable skill will set them up for life.
