Chargilled Mango with Mint and Lime Sugar

This is a simple and easy dessert featuring mangoes, the fruit of Summer! This dessert is quick and easy to prepare and a light end to a meal.

Serves 4-8

4 mangoes, cheeks removed
1/4 cup sugar

Mint & lime sugar
3 tablespoons raw sugar
1 handful mint leaves
zest 1 lime
2 limes, halved

vanilla or coconut ice cream, to serve

Garnish
toasted macadamias, chopped
shredded coconut, toasted
mint leaves
1 red chilli, seeds removed, finely chopped

Method:

  1. Combine the raw sugar, mint leaves and lime zest in a small food processor and blitz to combine. You can also do this in a mortar and pestle.
  2. Heat the bbq grill or pan and when hot place the mango and lime halves, flesh side down, on the grill and cook for 4-5 minutes or until golden.
  3. Place 1  mango half on the serving plate, sprinkle over the mint/lime sugar and garnish with some mint leaves and chilli.
  4. Make a nest for the ice cream with some toasted macadamia and coconut and balance a scoop of ice cream on top.

Our retail shop in Yamba is now CLOSED

Thank you to everyone who has supported us during the past 17 years. It’s been a fantastic experience but it’s time for new adventures!

We’d like to continue to offer cooking classes and other local food experiences, but first some time off to rest and rejuvenate! We’ll share updates here on the website, in our newsletter, and on Instagram and Facebook.

Meredith’s food tours for 2025 are unaffected by the shop’s closure. The tours to Umbria and Morocco are fully booked, however there are spots available on our fabulous Sicily tour in October 2025.
