Looking for a healthy and nutritious, guilt free sweet treat? These wholesome date, cashew and cacao balls are a great option and are so easy to make. We make up a double batch and store them in the fridge so we always have a healthy snack to enjoy with our afternoon cuppa.
Scott and Luke have kindly agreed to let us share their recipe. These guys appeared on My Kitchen Rules in 2013 and gained a loyal following of fans with their healthy, clean living food. Since then Luke and Scott have published three excellent cookbooks which contain loads of healthy, easy to prepare recipes along with great lifestyle advice.

Chocolate Chip Balls

Looking for a healthy and nutritious, guilt-free sweet treat? These wholesome date, cashew and cacao balls are a great option and are so easy to make. We make up a double batch and store them in the fridge, so we always have a healthy snack to enjoy with our afternoon cuppa.

Ingredients
  

  • 10 Medjool dates pitted
  • 1 cup raw cashews
  • 1 tbsp coconut oil melted
  • 2 tbsp raw cacao powder
  • 2 tbsp cacao nibs

Instructions
 

  • Place dates and cashews in the bowl of a food processor and blitz until finely chopped.
  • Combine coconut oil and cacao powder in a small bowl and add this to the dates and cashews along with the cacao nibs. Blitz again for a minute or so or until everything is combined, and the mixture will hold together when rolled.
  • Roll mixture into small snack size balls; about a tablespoon of the mixture is a good amount.
  • Store in a glass jar in the fridge to firm up and to keep them fresh.

Our retail shop in Yamba is now CLOSED

Thank you to everyone who has supported us during the past 17 years. It’s been a fantastic experience but it’s time for new adventures!

We’d like to continue to offer cooking classes and other local food experiences, but first some time off to rest and rejuvenate! We’ll share updates here on the website, in our newsletter, and on Instagram and Facebook.

Meredith’s food tours for 2025 are unaffected by the shop’s closure. The tours to Umbria and Morocco are fully booked, however there are spots available on our fabulous Sicily tour in October 2025.
