Looking for a healthy and nutritious, guilt-free sweet treat? These wholesome date, cashew and cacao balls are a great option and are so easy to make. We make up a double batch and store them in the fridge, so we always have a healthy snack to enjoy with our afternoon cuppa.
Ingredients
- 10 Medjool dates pitted
- 1 cup raw cashews
- 1 tbsp coconut oil melted
- 2 tbsp raw cacao powder
- 2 tbsp cacao nibs
Instructions
- Place dates and cashews in the bowl of a food processor and blitz until finely chopped.
- Combine coconut oil and cacao powder in a small bowl and add this to the dates and cashews along with the cacao nibs. Blitz again for a minute or so or until everything is combined, and the mixture will hold together when rolled.
- Roll mixture into small snack size balls; about a tablespoon of the mixture is a good amount.
- Store in a glass jar in the fridge to firm up and to keep them fresh.
