Gingerbread Crackle Biscuits

Ingredients
- 100 g unsalted butter chopped
- ⅓ cup golden syrup
- 1 ½ cups (225g) plain flour
- ¾ cup (155g) brown sugar
- 1 egg lightly beaten
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp grund allspice
- ¼ tsp ground black pepper
- ¼ tsp bicarb soda
- ¼ cup white sugar
- ¼ cup pure icing sugar sifted
Instructions
- Place the butter and golden syrup in a small saucepan and cook over low heat, frequently stirring until butter is melted and the mixture is well combined.
- Sift the flour into a mixing bowl. Add the brown sugar, spices and bicarb soda, then use a whisk to combine everything. Make a well in the centre and add the egg and melted butter mixture. Use a spoon to combine and mix into a dough. Cover with plastic wrap and place in the fridge for 45 mins to 1 hour to allow the dough to firm up.
- Preheat the oven to 180C. Line 2 baking trays with baking paper.
- Roll tablespoons of the mixture in the white sugar, shape into balls and toss in the icing sugar to coat. Place on the lined tray, allowing room between each biscuit for spreading.
- Bake for 15 minutes, swapping trays halfway through, or until lightly golden. Remove from oven and allow to cool completely on trays.
