Indian Spiced Nuts

These savoury spiced nuts make a great foodie gift as they are a perfect snack with drinks. Present these spiced nuts in a nice bottle, or in a cello bag tied with ribbon and placed in a small decorative bowl that is part of the gift.

Ingredients
  

  • 2 Tbsp brown sugar
  • 1 Tbsp Herbies' Curry Mix Seeds and Spices
  • ¼ tsp ground cinnamon
  • 2 tsp salt flakes
  • 1 egg white
  • 500 g raw mixed nuts
  • 50 g pepitas

Instructions
 

  • Preheat the oven to 150C. Line 1 large or 2 small baking trays with baking paper.
  • In a bowl combine the brown sugar, spice mix, cinnamon and salt flakes.
  • In a clean bowl, whisk the egg white to stiff peaks then whisk in the spice mixture.
  • Add the nuts and stir to coat evenly then tip the nuts onto the tray and spread into an even layer. Bake for 15 minutes then remove from the oven and give the nuts a stir. Reduce the oven temperature to 125C.⁠
  • Return the nuts to the oven for a further 10-15 minutes or until dry and golden and starting to smell really good. Remove from the oven and allow to cool for a few minutes then try one - if it’s nice and crunchy they are ready. If not return them to the oven for another few minutes and test again.
  • Allow to cool then transfer to an airtight jar or container, or divide into gift bags and seal. Nuts will keep for several weeks if stored in an airtight jar.⁠

Our retail shop in Yamba is now CLOSED

Thank you to everyone who has supported us during the past 17 years. It’s been a fantastic experience but it’s time for new adventures!

We’d like to continue to offer cooking classes and other local food experiences, but first some time off to rest and rejuvenate! We’ll share updates here on the website, in our newsletter, and on Instagram and Facebook.

Meredith’s food tours for 2025 are unaffected by the shop’s closure. The tours to Umbria and Morocco are fully booked, however there are spots available on our fabulous Sicily tour in October 2025.
