Marinated Olives

Marinated olives recipe, Kitchen to Table Yamba

This is such a simple recipe however it transforms the humble olive into a taste sensation. Serve these with drinks or as part of a tapas or antipasto selection. Your guests will love them!

1 x 400g jar Kalamata olives, or a selection of mixed olives (We love these olives by Alto)
2 cloves garlic, finely sliced
2 strips lemon peel
2 strips orange peel
1 red chilli, seeds & pith removed, finely sliced
2 whole red chillies
2 sprigs thyme
1/2 cup olive oil

Method:
Preheat the oven to 180C.
Place all of the ingredients in an ovenproof serving dish, adding enough oil to cover the olives. Place in the oven & bake for 20 mins.
Remove from oven, drain & reserve the baking oil.
Serve olives warm.
