Marinated olives is a simple idea that doesn’t really require a recipe, but it can be useful to have a list of ingredients and a method to follow. Feel free to substitute in other herbs and flavours that you might have on hand.
Warming the olives in some oil with these fragrant ingredients transforms the humble olive into a taste sensation. Serve these with drinks or as part of a tapas or antipasto selection. Your guests will love these marinated olives!
1 x 400g jar Kalamata olives, or a selection of mixed olives
2 cloves garlic, finely sliced
2 strips lemon peel
2 strips orange peel
1 red chilli, seeds & pith removed, finely sliced
2 whole red chillies
2 sprigs thyme
1/2 cup olive oil
Method:
Preheat the oven to 180C.
Place all of the ingredients in an ovenproof serving dish, adding enough oil to cover the olives. Place in the oven & bake for 20 mins.
Remove from oven, drain & reserve the baking oil.
Serve olives warm.
