Melting Moments Recipe, Kitchen to Table

A nostalgic biscuit that is a favourite among many of us. I have friends who love these, especially when filled with passionfruit icing, and to whom I gift a batch for birthdays or special occasions.

I found this recipe in a Vogue Entertaining cookbook that was perhaps published in the 1990’s … do you remember that publication? They were always filled with delicious, achievable recipes and mouth watering food photography.

I hope you enjoy this recipe for a very special biscuit which comprises two short, crumbly discs connected with a delightful, fruit spiked creamy icing. Think passionfruit, orange, raspberry …


180g unsalted butter, softened
50g icing sugar, sifted
1 tsp vanilla bean paste or vanilla essence
225g plain flour
2 tsp baking powder
60g custard powder

40g unsalted butter, softened
zest of 1 orange OR pulp of 1 passionfruit
60g icing sugar, sifted
a little orange juice, if needed


  1. Preheat the oven to 165C (fan forced) and line 2 baking trays with baking paper.
  2. Using a stand mixer or electric beaters cream the butter, sugar and vanilla until light and fluffy.
  3. Meanwhile, sift together the flour, baking powder and custard powder.
  4. Add sifted dry ingredients to the creamed butter and sugar and mix gently on low speed to combine.
  5. For even sized biscuits weigh dough into 20g portions. Roll each portion into a ball and place on the baking tray, leaving a few centimetres between each. Use a lightly floured fork to gently flatten each ball of dough.
  6. Bake for 12 to 15 minutes or until firm and the biscuit can be moved easily on the tray when pushed gently. Another way to check is to carefully pick up one of the biscuits to check the bottom side, if it is lightly golden and the biscuit is firm they are ready.
  7. Remove the trays from the oven and allow to cool on the tray for 5 minutes, then transfer to a cooling rack to cool completely.
  8. Meanwhile prepare the icing – combine the butter, icing sugar, and orange zest or passionfruit pulp and mix together until light and creamy. As this is a small quantity you can do this by hand with a small bowl and a spoon. Add a little orange juice if the mixture is too stiff.
  9. Pair up the biscuits finding 2 halves that match one another, add a dollop of icing and sandwich the biscuits together using just enough pressure to coax the icing towards the edges. Allow to sit on a tray until the icing firms up, then transfer to an airtight container.
