Mother’s Day – our favourite recipes

Spoil your Mum this Mother’s Day by making her something delicious. Here’s our list of recipes that we think are just perfect for the occasion …

  1. Almond croissants – we cheat a little by using store-bought croissants but the creamy almond filling makes these a special breakfast treat.
  2. Vegetable frittata – this light and tasty frittata is an excellent choice for breakfast or lunch as it can be prepared ahead of time, travels well and can be reheated easily. Serve with toasted sourdough for breakfast, or a salad and crusty bread for lunch.
  3. Rustic ricotta tart – this rustic tart is the perfect choice for a picnic and makes a delicious lunch with a crisp salad and some crusty bread. Change up the vegetables with what’s in season or what you have on hand.
  4. Friands – are a favourite tea-time treat. These deliciously moist, buttery almond cakes can be topped with seasonal fruits or simply with flaked almonds.
  5. Whole orange cake – this quick and easy orange cake is perfect for morning or afternoon tea. It’s a trusted recipe from the CWA and is soft and moist and well flavoured from the whole orange.⁠ Yes, you use the whole, raw orange … skin, flesh and all!
  6. Melting moments – treat your mum with some homemade baking, she’ll love you even more!
