Our favourite Christmas baking recipes, Kitchen to Table, Yamba

Here’s the list of our favourite Christmas baking recipes which we come back to every year. We love Christmas for many reasons but for me, it’s the baking traditions that make it really special. I don’t eat fruit cake very often throughout the year but I really enjoy it at Christmas. I love a fruit mince tart with a cup of tea in the week leading into Christmas, and I have taken to making chocolate truffles with leftover Christmas cake or pudding. These are perfect with a cuppa, or after a meal. They also make lovely edible gifts for friends and family.

So here is a list of our favourite Christmas baking recipes. I hope you find some inspiration in this list …

  1. Belinda Jeffery’s Last Minute Christmas Cake
  2. Teresa Cutter’s Healthy Christmas Cake for a gluten-free, dairy-free, and no added sugar option.
  3. My Mum’s Stout, chocolate and orange fruit cake. My sister requests one of these cakes every year.
  4. My fruit mince tarts. These tarts just melt in your mouth!
  5. Use any leftover Christmas cake or pudding to make these moreish chocolate truffles.
  6. Rocky road is a favourite chocolate treat for the variety of flavours and textures with every mouthful.
  7. Jill Dupleix’s chocolate crinkle biscuits are very moreish and make an exceptional dessert when paired with a scoop of vanilla ice cream and a scattering of fresh raspberries.
  8. These ginger crackle biscuits are filled with spice and all things nice.
  9. These cheats’ homemade almond croissants are a special Christmas morning treat.
  10. These spiced nuts are perfect for gifting or to put out for nibbles.

Our retail shop in Yamba is now CLOSED

Thank you to everyone who has supported us during the past 17 years. It’s been a fantastic experience but it’s time for new adventures!

We’d like to continue to offer cooking classes and other local food experiences, but first some time off to rest and rejuvenate! We’ll share updates here on the website, in our newsletter, and on Instagram and Facebook.

Meredith’s food tours for 2025 are unaffected by the shop’s closure. The tours to Umbria and Morocco are fully booked, however there are spots available on our fabulous Sicily tour in October 2025.
