When the mornings turn cold I begin to crave a bowl of porridge for breakfast. It is warm, comforting and sustains me through till lunch.

1/2 cup rolled oatsā
1 tsp gheeā
3/4 cup waterā
pinch saltā
1/4 tsp ground gingerā
1/4 tsp ground cinnamon ā
1/2 pear, gratedā
1/4 cup milkā
ā
Method:
- Heat a small saucepan over medium heat and when hot add the ghee. Once the ghee is melted add the oats and toast for a minute or so. Add the water and salt and stir. Remove from the heat and allow to soak for 30 minutes (this just allows the oats to soften making the porridge creamier and quicker to cook. You could do up to this step the night before)ā
- Add the spices, pear and milk and return to the heat. Bring to the boil then reduce heat and simmer for 3 minutes.
- Transfer to your serving bowl and sprinkle with your choice of sweetener (I like brown or raw sugar). Pour over extra milk if desired.ā
