This recipe for roasted asparagus with prosciutto is a must when asparagus is at its peak in early Spring. It’s such a simple recipe but the saltiness of the prosciutto brings out the flavour of the asparagus, and a touch of lemon adds a burst of freshness.

Roasted Asparagus with Prosciutto
This is a simple and delicious way to prepare asparagus.

Ingredients
- 2 bunches asparagus (about 12 spears)
- 6 thin slices prosciutto
- 2 tbsp olive oil
- 150 ml water
- salt & pepper to season
- 1 lemon, finely zested
Instructions
- Preheat the oven to 200C fan-forced. You will need a shallow baking dish that will fit the asparagus in a single layer.
- Trim the asparagus to remove the tough ends.
- Cut the prosciutto slices in half lengthwise to create 12 long thin strips. Wrap a strip of prosciutto in a tight twirl around each asparagus spear.
- Place the wrapped asparagus in a single layer in a shallow baking dish with the olive oil and water, turning to coat. Season with salt and pepper and scatter over the lemon zest.
- Roast for approximately 15-20 minutes or until the asparagus is tender and starting to brown around the tips. Serve hot or at room temperature.
