Resourceful recipes for trying times, Kitchen to Table Yamba

The Flood of 2022 has severely impacted South-East Queensland and Northern NSW and is now headed south to Sydney. It has been a wild few days here in Yamba and our hearts go out to everyone who has been impacted by this flood event.

The flood has seen the shelves in the local supermarket cleaned bare and it may be several days before fresh supplies are available again. So, this may be the time to go through your pantry, fridge and freezer and get creative with your cooking.

Here is a selection of recipes that we hope will inspire you to use what you have on hand at home …

  1. Try this oven-baked chicken and rice recipe if you’ve got chicken thighs, rice, and some spices on hand.
  2. This sweet potato galetteĀ recipeĀ can be adapted to use whatever vegetables you have in the crisper.
  3. If you’ve got puff pastry and mince in the freezer, make these savoury hand pies.
  4. A trustyĀ zucchini slice is a tasty option for lunch.
  5. Try thisĀ creamy tuna bakeĀ that uses pantry, fridge and freezer staples.
  6. This Armenian nutmeg cakeĀ recipe calls forĀ walnuts and other pantry staples butĀ sub in pecans or another nut for the walnuts. Perfect with yourĀ morning cuppa.
  7. Fill the biscuit tin with a batch of good old Anzac biscuits, they are sure to lift one’s energy and spirits.

 

It’s going to take time and lots of resources to recover from the flood of 2022 but we have seen communities band together to help one another. In all of the loss and devastation, the strength and resilience of the community is inspiring.
