Blueberry Compote
Inspired by Meredith's trip to Kangaroo Island and to have alongside Meredith's version of Maggie Beer's Lemon Delicious Pudding. You need a delicious side to go with it! So try this Blueberry Compote that is light, tangy, and comforting. All while using local ingredients from the local Farmer's Market.
- 125 g blueberry punnet or use frozen ones
- 75 g caster sugar
- ¼ cup water
- lemon juice squeezed
- 1 tsp limoncello (an italian lemon liqueur, optional)
Place the sugar and water in a small saucepan over medium heat, stirring often until the sugar is dissolved. Increase heat and bring the sugar syrup to the boil. Reduce heat and simmer for 5 minutes.
Add the blueberries and a squeeze of lemon juice. Simmer rapidly for about 6 minutes or until slightly thickened.
Place in a serving dish alongside the lemon delicious pudding.
