Pizza Scrolls
Pizza scrolls are easy to make and are excellent for school lunches or for an afternoon snack. The dough is made with flour and yoghurt and it's easy to roll out.

Dough
- 2 cups (300 g) self-raising flour plus extra to dust
- 1 tsp baking powder
- 1 tsp salt
- 250 g plain yoghurt
Toppings
- 1 cup pizza sauce or tomato passata
- 1 cup grated cheddar cheese, or pizza cheese mix
- 150 g ham or salami chopped
For the dough
Place the flour, baking powder, and salt in a mixing bowl and use your hands or a whisk to combine.
Add the yoghurt and mix with a spoon to form a dough. Add a little extra yoghurt if it seems dry but not too much. The flour will hydrate with a little time.
Dust the bench with flour and turn the dough out onto the bench and knead briefly for 1-2 minutes until it comes together. Place an upturned bowl over the dough and let it rest for 10-15 minutes.
To make the scrolls
Preheat the oven to 190 C (fan-forced) and line a large baking tray with baking paper.
Dust the bench and a rolling pin with flour and roll out the dough into a rectangle that measures 35 x 40 cm, approximately.
Spread the dough evenly with pizza sauce then sprinkle over the ham and cheese. See the Notes section below for variations.
Working with the longer edge start rolling up the dough to form a log. You want the roll to be reasonably tight. When the dough is rolled up put the seam on the bottom.
Divide the log into 12-14 portions, you can use a ruler to help you with this, I made these approximately 3 cm wide.
Lay the slices cut side up on the lined tray leaving a gap of 2 cm between each scroll so they have room to expand in the oven.
Bake for 20-25 minutes or until golden and cooked through. Transfer to a wire rack to cool.
This recipe can also be used to make vegemite and cheese scrolls, simply replace the pizza sauce with a layer of vegemite (as thick or thin as you like it) and sprinkle over the cheese, then continue with the recipe from step 4 (How to make the scrolls).
You could also make a sweet version by spreading the dough with a layer of Nutella (obviously omit the pizza sauce, cheese, and ham) then continue with the recipe from step 4 (How to make the scrolls).
